Sweet Potato Rolls
Servings: 18
1 (.25 oz.) pkg. active dry yeast
4 T. white sugar
1/2 C. canned sweet potato puree
1/2 C. warm water (110°F)
3T. margarine, softened
1 tsp. salt
2 eggs
3-1/2 C. all-purpose flour
Dissolve yeast, warm water, and 1 T. sugar in a mixing bowl. Let stand 5 min.
Add remaining sugar, sweet potato, butter or margarine, salt, and slightly beaten eggs. Stir to mix well. Stir in 3 C. of flour. Turn out on a lightly floured surface. Knead 2 to 3 min., adding just enough of remaining flour to prevent sticking. Do not knead too heavily; when smooth, shape into a ball. Place in an oiled bowl and turn to coat the surface. Cover and let raise about 1 hour or longer.
Punch down and allow dough to rest for 2 min. Divide into 16 to 20 balls, and place on a greased cookie sheet or in a 9x13 inch pan. Allow to rise until doubled.
Bake at 375°F for 12 to 20 minutes. Serve warm
Slow Cooker 3-Bean Chili
Prep Time: 10 min.
Cook Time: 4 hrs. 10 min.
Total Time: 4 hrs. 20 min.

1 (20 oz.) pkg. 93%-lean ground turkey
1 (28 oz.) can diced fire-roasted tomatoes
1 (16 oz.) can tomato sauce
1 (15.5 oz.) can pinto beans, rinsed and drained
1 (15.5 oz.) can kidney beans, rinsed and drained
1 (15 oz.) can reduced-sodium black beans, rinsed and drained
1 small onion, chopped
1 (4.5 oz.) can chopped green chiles
2 T. chili powder
1 T. minced garlic
1 tsp. oregano
1 pinch ground cumin
Cook and stir turkey in a large skillet over medium-high heat until crumbly and browned, 7 to 10 min., transfer to a slow cooker.
Stir in tomatoes, tomato sauce, pinto beans, kidney beans, black beans, onion, green chilies, chili powder, garlic, oregano, and cumin in the slow cooker.
Cover and cook on Low for 7 hours or High for 4 hours.
Meat Pie
Prep Time: 25 min.
Cook Time: 25 min.

1 med. potato, peeled and cubed
1/2 lb. ground beef
1/2 lb. ground pork
1/2 C. chopped onion
1/3 clove garlic, chopped
1/2 tsp. mustard powder
1/2 tsp. dried thyme
1/4 tsp. dried sage
1/4 tsp. ground cloves
1 tsp. salt
1/4 tsp. ground black pepper
1/4C. water
1 (15 oz.) package refrigerated pie crusts
Gather all ingredients. Preheat the oven to 425°F.
Place potato in a saucepan with enough water to cover. Bring to a boil, and cook until tender, about 5 min.
Drain, mash, and set aside.
Meanwhile, crumble ground beef and pork into a large saucepan. Add onion, garlic, mustard powder, thyme, sage, cloves, salt, and black pepper. Stir in water. Cook over medium heat, stirring, until meat is evenly browned.
Remove from the heat and mix in mashed potato.
Ease one pie crust into a 9-inch pie plate. Fill with meat mixture, then top with the remaining pie crust.
Trim any excess dough, then crimp the edges with the tines of a fork to seal. Prick top crust a few times with a knife to vent steam. Cover the edges of the crust with aluminum foil.
Bake in the preheated oven until crust is browned, about 25 min.
Excellent Taco Casserole
Prep Time: 10 min.

6 C. corn tortilla chips
2 C. vegetarian chili with beans
1 C. shredded cheddar cheese
2 C. shredded lettuce
2 Roma (plum) tomatoes, chopped
1/2 C. salsa
1/4 C. sour cream
Preheat the oven to 350 °F.
Place chips in the bottom of a 9x9-inch baking dish. Pour chili straight from the can over chips. Sprinkle shredded cheese over top.
Bake for 20 to 25 min. in the preheated oven, until chili is bubbling, and cheese is melted. Top with lettuce, tomato, sour cream, and salsa in the pan, or after serving if people are picky.
Honey Garlic Pork Chops
Prep Time: 10 min.
Cook Time: 20 min.
Total Time: 30 min.

1/2 C. ketchup
2-2/3 T. honey
2 T. low-sodium soy sauce
2 cloves garlic, crushed
6 (4 oz.) 1” thick pork chops
Preheat grill for medium heat and lightly oil the grate. Gather ingredients. Whisk ketchup, honey, soy sauce, and garlic together in a bowl to make a glaze.
Sear the pork chops on both sides on the preheated grill. Lightly brush glaze onto each side of the chops as they cook; grill until no longer pink in the center, about 7 to 9 min. per side. An instant-read thermometer inserted into the center should read 145°F
Note: You can bake these pork chops instead. Bake them at 350°F for about 40-45 min., or until the internal temperature reaches 145°F.
Creamy Corn Casserole
Prep Time: 10 min.
Cook Time: 45 min.
Total Time: 55 min.

1 (15 oz.) can whole kernel corn, drained
1 (14.75 oz.) can creamed corn
1 (8.5 oz.) package dry cornbread mix
1 C. sour cream
1/2 C. butter, melted
2 lg. eggs, beaten
Preheat the oven to 350 °F. Lightly grease a 9x9-inch baking dish.
Mix whole and creamed corn, cornbread mix, sour cream, melted butter, and eggs together in a medium bowl until well combined. Spoon mixture into the prepared dish.
Bake in the preheated oven until the top is golden brown and a toothpick inserted in the center comes out clean, about 45 min.
Mascarpone Mashed Potatoes
Prep Time: 15 min.
Cook Time: 35 min.
Additional Time: 5 min.
Total Time: 55 min.

4-1/2 lbs. russet potatoes, peeled and halved lengthwise
1/2 C. mascarpone cheese at room temperature
1 egg yolk
3/4 C. milk
salt and black pepper to taste
1 pinch cayenne pepper, or to taste
1 C. butter, cut into chunks
Place potato halves into a large pot of salted water, bring to a boil, and reduce heat to medium-low. Cook until very tender, about 15 min. A knife should pierce the middle of a potato half easily. Transfer potatoes to a colander and drain thoroughly, about 5 min.
Preheat oven to 425°F.
Whisk mascarpone cheese in a mixing bowl until smooth. Stir egg yolk and milk into mascarpone cheese, whisking until smooth; season with salt, black pepper, and cayenne pepper.
Transfer potatoes to a separate large mixing bowl, add butter chunks to potatoes, and season with salt and black pepper. Mash butter into potatoes with a potato masher until fluffy; a few lumps are okay. Whisk mascarpone mixture into mashed potatoes.
Spread mashed potatoes into a 9x13-inch baking dish. Smooth the top and use the tip of a spatula to lightly press the potatoes and lift up to create little peaks and valleys in the top.
Bake in the preheated oven until potatoes are heated through and top is golden brown, about 20 min.
Apple Cider Doughnut Cake
Prep Time: 15 min.

1-1/4 C. granulated sugar, divided
1/2 C. light brown sugar
1 C. chunky applesauce, at room temperature
1 C. apple cider, at room temperature
3 lg. eggs, at room temp.
3/4 C. vegetable oil
2 tsp. vanilla extract
3 C. all-purpose flour
2-1/2 tsp. ground cinnamon, divided
1-1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/4 tsp. ground nutmeg
Baking spray with flour
1/4 C. unsalted butter, melted
For the cake: Preheat the oven to 350°F.
In a large bowl, whisk together 1 C. of granulated sugar, light brown sugar, applesauce, apple cider, eggs, vegetable oil, and vanilla until well combined.
In a medium bowl, whisk together the flour, 1-1/2 tsp. of cinnamon, baking powder, baking soda, salt, and nutmeg until well combined. Gradually stir the flour mixture into the apple cider mixture, mixing until just combined.
Spray a 10- to 12-cup Bundt pan with baking spray with flour. Pour the batter into the prepared pan. Bake until a wooden pick comes out with a few moist crumbs, 50 to 55 min. Let the cake cool for 10 min. in the pan. Place a wire rack over a rimmed baking sheet.
Meanwhile, in a small bowl, combine the remaining 1/4 C. of granulated sugar with the remaining 1 tsp. of cinnamon.
Invert the warm cake onto the prepared rack. Brush the cake with the melted butter and sprinkle it thoroughly with the cinnamon sugar, pressing to adhere. Let the cake cool completely before slicing and serving.
Old-Fashioned Creamy Rice Pudding
Prep Time: 5 min.
Cook Time: 20 min.
Total Time: 25 min.
1-1/2 C. cooked rice
2 C. milk, divided
1/4 tsp. salt
2/3 C. golden raisins (Optional)
1 egg, beaten
1/3 C. white sugar
1 T. butter
1/2 tsp. vanilla extract
Place cooked rice in a medium saucepan. Add 1-1/2 C. milk and salt; cook and stir until thick and creamy, 15 to 20 min.
Add remaining 1/2 C. milk, golden raisins, beaten egg, and white sugar; continue cooking, stirring continuously, until well blended, 2 to 3 min. more.
Remove saucepan from heat; stir in butter and vanilla extract.
