Total Time: 4 hr. 55 min.
Servings: 7-8
2 T. olive oil, divided
2 celery stalks, chopped
1 carrot, chopped
1 onion, chopped
Salt & black pepper, to taste
3 cloves garlic, finely chopped
1/3 C. tomato paste
1/2 C. dry red wine
2 lb. ground beef

To serve:
1 lb. fettuccine
Grated parmesan cheese
Chopped fresh basil

In a large skillet, heat 1 T. of the oil over medium heat. Add the celery, carrot, and onion, and season with salt and pepper. Cook until softened, about 10 min.
Stir in the garlic and cook for another minute. Add the tomato paste and cook for 1 min. more. Add the red wine and cook, scraping the bottom of the pan, until it is mostly reduced, about 3 min. Pour the mixture into the base of a slow cooker.
