Poppy Seed Chicken Salad

1 box rotini

2 c. cooked chicken

1 cup dried cranberries

½ c. yellow onion (or to taste, I use less)

4 stalks celery, chopped

1 cup slivered almonds, toasted

 

Dressing:

2 c. mayonnaise

¼ c. powdered sugar

2 T. vinegar

2 T. water

2 T. poppy seeds

2 tsp. salt

½ tsp. pepper

 

 

Cook pasta according to package directions; drain and rinse in cold water. Combine pasta, chicken, dried cranberries, onion and celery in large bowl.

In a small bowl, mix dressing ingredients until well combined. Pour over salad; toss to coat. Top with almonds.
