A member of the Drummer Staff made one of Darlene Dixon’s recipes featured in the July 7 issue of the Drummer: Lemon Crisp Cookies. The cookies are very light, and great for summer!
Lemon Crisp Cookies
1 lemon cake mix
1 c. crisp rice cereal
½ c. butter, melted
1 egg, beaten
1 tsp. lemon zest
In a large bowl, combine all ingredients (dough will be crumbly). Shape into 1-inch balls. Place 2 inches apart on ungreased baking sheets. Bake at 350 degrees for 8-9 minutes. Cool 1 minute before removing from pan.
Yield: 4 dozen.
